These spices are also used as appetisers and digestive, like
Ginger, Garlic, Cardamom, Clove and Cinnamon. Herbs like
Mint, Coriander, Fenugreek, and Basil are essential parts of
the spicing element.
Besides spices, the other main ingredients of Indian cooking
are milk products like ghee (used as a cooking medium) and
curd or dahi. Lentils or dals are also common across the
country and regional preferences and availability determine
the actual use in a particular area. Vegetables naturally
differ across regions and with seasons. The style of cooking
vegetables is dependent upon the main dish or cereal with
which they are served. Vegetarian and Non-Vegetarian
Curries are mode fresh, choosing right blend of rich spices,
herbal and natural ingredients.
It's a tradition to add a selection of Sweets/Puddings made
from Rice, Wheat, Cereal, Sugar, Fruits and nuts like
Almonds, Cashew, Pistachios, complemented by a touch of
raisins, camphor and spiced with Saffron and Cardamom, at
the end of every meal.
